350 grams whole wheat bread flour
350 grams white bread flour
300 grams rye bread flour
350 grams water
350 grams Butter Milk
8 grams of active dry yeast
25 grams salt

Combine the water, yeast and 350 grams of the flour. Mix thoroughly and let rest for 30 minutes. Add the salt and the remaining flour mix and knead until it all of the flour is incorporated. Let rise for 1 hour. Then shape into loaf, let rise again for 30-45 minutes. Bake at 425 for 45-50 minutes.
